Zucchini Turkey Loaf (Or Burgers)

1. Shred one medium sized zucchini with a hand grater and add to a large bowl
2. Cut up a small handful of fresh cilantro and add to bowl
3. Add two small packages of lean ground turkey
4. Spice with onion powder, fresh garlic, celery salt, and a pinch of chili powder and sea salt
5. Add one egg and mix gently until all ingredients are folded in together
6. Choose:
> make into small patties and either BBQ or brown both sides in a pan and then bake on a cookie sheet until cooked through
> or rub a little bit of organic unsalted butter in a loaf pan, add mixture and bake @ 365 for about 40 mins or until cooked through
7. Serve with regular salsa or mango/peach salsa. The zucchini makes these burgers/loaf nice and moist!

Lean Green Turkey

1. Begin cooking lean ground turkey in a large wok pan.
2. Pull apart the leaves of 5 brussel sprouts (like a head of lettuce).
3. In another large pan add 1 tbsp of organic unsalted butter and finely chopped fresh garlic.
4. Add the brussel sprout leaves, and a chopped zuchinni.
4. While they lightly sautee, drain the fully cooked turkey of any oil and liquid.
5. Add the brussel sprouts, zuchinni, and garlic mixture to the turkey and add 5-6 large handfuls of spinach.
6. While the entire mixture combines and spinach wilts, season with a bit of poultry seasoning, onion salt, and fresh ground pepper.
*Yum! I even like to eat this for breakfast.
